This comes from Jif.com. Use any peanut butter you like. I like to top mine with crunchy peanut butter and syrup. Makes me hungry just thinking about it!

Ingredients

Directions

    In a large bowl, mix flour, sugar, baking powder and salt.
  2. 2
    In a smaller bowl, beat egg with peanut butter.
  3. 3
    Stir in milk and oil.
  4. 4
    Add to the dry ingredients, stirring until well blended.
  5. 5
    Cook on a lightly greased skillet till bubbles break on the surface.
  6. 6
    Flip to cook the other side.

Terrific! My 1 yr old son loves them!! (I do, too!). Followed others advice & only used 1 TBSP baking powder - very pleased w/ the results. Thank for posting!

    I followed the directions exactly and like some other people I found the pancakes to be kind of bitter. I will make these again but will try using only 1TBS of baking power and 1tsp of baking soda. I love the idea of peanut butter pancakes though and hope that they will come out better next time. UPDATE I made these again with the baking soda replacing 1 Tbs of baking powder and they were SO much better

    To avoid the bitter after-taste (I've encountered that with other pancake recipes before... Blech!), I also cut down the baking powder to 1tbsp+1tsp, and they still came out wonderfully light and fluffy. Fantastic with fresh stewed apples and syrup. Can't wait to try them with banana. These will become a regular Sunday morning event for me!

    We loved this! The kids gobbled them up, and the hubby loved them too! The peanut butter flavor is really there, without being overwhelming. We used creamy peanut butter, but that was what was on hand. Thanks for an easy, fast, and tasty breakfast!
