The Best Easy Beef and Broccoli Stir-fry

Recipe #99476 | 25 min | 15 min prep | add private note

I clipped this recipe from Taste of Home magazine several years ago and have found it to be the best-tasting easy beef and broccoli stir-fry. It is credited to Ruth Stahl. I often use charcoal chuck steak, which is very tender and lean. I also like that it doesn't call for any unusual ingredients.

SERVES 4 (change servings and units)

Ingredients

Directions

  1. 1
In a bowl, combine 2 tablespoons cornstarch, 2 tablespoons water and garlic powder until smooth.
  2. 2
    Add beef and toss.
  3. 3
In a large skillet or wok over medium high heat, stir-fry beef in 1 tablespoon oil until beef reaches desired doneness; remove and keep warm.
  4. 4
Stir-fry broccoli and onion in remaining oil for 4-5 minutes.
  5. 5
    Return beef to pan.
  6. 6
Combine soy sauce, brown sugar, ginger and remaining cornstarch and water until smooth; add to the pan.
  7. 7
Cook and stir for 2 minutes.
  8. 8
    Serve over rice.

This turned out brilliant! My husband, sister and I all loved it! I let the beef sit in the cornstarch+garlic mixture a bit, and it made it extra tasty! I served it with plain white rice, and it was amazing! Definitely a keeper in my house!

We enjoyed this immensely. My daughter requested it and gave it five stars. This definitely goes on our "make again" (and again) list! Edited to say I added a little dab of red chili paste to this and it gave it a touch more flavor but no heat. A family favorite!

Loved it. Very quick and easy to make, and the sauce was very tasty. I also added some jicama along with the broccoli, just because we had some — and it was a nice complement to the broccoli and sauce. We liked the recipe as posted, but I have a few changes I will try next time: (1) skip the water in step one and coat the beef with just cornstarch and garlic powder (2) use fresh ginger. Thanks!

Made this the other night and the fam devoured it. Very tasty and easy. I used lite soy sauce and that cut down on the salt. I will double the sauce next time. Oh, and I used frozen broccoli and it came out just fine. Also, next time I'll add green and red peppers. This would also be great with chicken.
