Caloric, filling, and tasty bars for the trail. These bars give a flavourful and fulling treat along a hiking or cycling trail. The recipe is from Ben Branch of AT&T Bell Labs at Columbus.

SERVES 24 -48 , 24 -48 bars (change servings and units)

Ingredients

Directions

    Preheat oven to 350°F.
  2. 2
    In a large bowl: cream together peanut butter and butter.
  3. 3
    Mix in bananas, molasses, sugar, and vanilla.
  4. 4
    Add beaten eggs, mix well.
  5. 5
    Stir in the cereal.
  6. 6
    Sift together dry ingredients and mix into batter.
  7. 7
    Add chips, peanuts, and dates.
  8. 8
    Pour batter into greased 9x13 pan.

    Bake in preheated 350°.
  10. 10
    F oven for 35 to 45 minutes.

    Cut into bars.

    Allow to cool just enough to handle and remove from pan.

Hmmm. I am wondering if I did something wrong. These were not "bars" in the sense that I am used to. These were more like a dense cake. I wondered if they should have been prepared in a 10x15 pan instead of 9x13. Also, my Special K didn't add a crunch (as another reviewer commented). The flavor was good, and the bars are very filling. I guess that I just expected something a little different. Still, it will be nice to have these on hand for the busy week ahead. It will be a great grab-and-go breakfast. Thanks for posting the recipe.

    Toolie these were great. Made them yesterday in my large cookie sheet. I baked them for 25 minutes in my convection oven and they came out just right. I like the crunch that the Spec K gives them. I used frozen banana which was really mushie and wondered if this would make a difference, but I think it was o.k. Had two for breakfast this morning.hummmmm. Thanks for the recipe.

    Yes, yes, yes!, simply outstanding according my DS fiance. I made these for her today and sent them home with her, cut into squares to munch on in replacement of breakfast. Didn't have any dates so I used raisins instead. The batter was a bit thick, so I had to press down with my fingers to spread evenly in the pan. Toolie, these are totally TOO good!, and so many good things in them, I can't wait to make them again...thanks so much for posting....Kitten
