I had found this recipe from Whole Foods a long time ago, and I love it. My favorite way to make it is with cinnamon-raisin bread toasted first, and I use hazelnut butter in place of the peanut butter. It is a very adaptable recipe and there is something so comforting about the smell of warm apples and cinnamon. Yum!!

I also toasted the bread before broiling. Excellent! Thank you for the recipe!

Like having apple pie for lunch without all the hydrogenated fat. Loved it. I took HeatherFeather's suggestion and first toasted the bread. I liked the proportions of the ingredients and made no changes. Great sandwich, Nadia.

This was very good. An unusual combo, but it really works out well.Next time,I would toast the bread lightly first before adding the rest of the ingredients and then broiling, as it got a little soft in spots under the apples. I also would use a bit more peanut butter and a little less tahini to balance the flavors - perhaps 2 tsp of each. But really - this is a great choice for a light lunch, especially for a Vegetarian or a a dieter. Very filling.
