Simple Tomato Sandwich

I am only posting such a simple recipe because I actually somehow lived 29 years of life before my husband introduced me to the Tomato Sandwich. If you've only used tomatoes as an accessory in your sandwiches, and not as the Featured Ingredient, you are truly missing summer as it was meant to be tasted.

Ingredients

  • slices bread (homemade strongly recommended, cracked wheat is my specific favorite)
  • medium organic tomato or garden tomato (room temperature or fresh from the stalk, do NOT attempt this with pale, store-bought types!)
  • tablespoons Miracle Whip or mayonnaise (adjust amount to your taste, plain ol' mayo may be substituted for the faint of heart, but I can't)
  • salt, to taste
  • Directions

      Toast bread.
    2. 2
      Slice tomato.
    3. 3
      When bread is adequately toasted, liberally spread both sides with Miracle Whip (or butter one side with Miracle Whip on the other).

      Lay tomato slices on one side of bread.

      Salt tomato to taste.

      Slap that baby together and savor summer at its best!

    Not something I would expect from a gourmet chef's restaurant, but any recipe that has me eating it less than 5 minutes after seeing the recipe deserves way more than 5 stars (and 3 sandwiches at that)! Everyone has their personal favorite bread (I prefer squishy, white bread like Wonder), but don't usually toast mine unless making a blt or club). Warm tomatoes are a law and I would only use home-grown garden tomatoes (or bought ones if the bought ones were heirloom type). I go with mayo and no salt for me- just sopping up the tomato juices from the slices onto the bread before adding the mayo. I learned this recipe from my dad, who was a depresson-era child, but kept his love for the simple things always. Sometims simple is best, and at that here's 5 more stars for your collection!

    Ingenious! Whenever I've craved a sandwich, but had no meat options, I would sulk and opt for something else - but who ever would've thought to just have a tomato sandwich?! And it's perfect because you only get the best part - the tomato and mayo! I must've had 3 of these today after finding this recipe...

    I am in 7th heaven right now. I read this recipe and had to have one right now. It is about 2:30 a.m. and I am lovin it. Thanks for posting this. I would never have thought a tomato sandwich would be this good. I made no substitutions. Great as is.

    On hot summer days when the tomatoes are at the peak of perfection nothing beats a tomato sandwich. My first taste of this was at a friend's house and she always bought Dukes mayonnaise so every summer I get a small jar of Dukes just for this. They are best when eaten while still wet from the lake or pool For the Vegans, I knew someone who ate these with mustard and loved every bite just as much. I also sometimes put a thin slice of vadalia onion on this if in season and when out of mayo butter is good too. I don't miss the heat but I do miss summer's bounty.
