These are my favorite pancakes...so light and fluffy.

8 -10 pancakes (change servings and units)

Ingredients

    Preheat a skillet over medium heat.
  2. 2
    Mix all of the ingredients til combined.
  3. 3
    Melt a little bit of butter in the pan.
  4. 4
    Pour the batter by spoonfuls into the hot pan, forming 5-inch circles.
  5. 5
    When the edges appear to harden, flip the pancakes.
  6. 6
    They should be golden brown.
  7. 7
    Cook the pancakes on the other side until they are also golden brown.
  8. 8
    Enjoy.

Perfectly lovely pancakes They were very similar to IHOP. I made my own buttermilk using 1% milk and vinegar. Other ingredients were measured precisely. I buttered the grill. I let the batter rest for 10 minutes, which made it look like it expanded. Quick note: beat it well. I thought mine was very well blended, but toward the middle, I found pockets of flour. I used a beater on low speed, so maybe I should go with a higher speed for longer. Some of the pancakes had a sweeter flavor than other, but it was more interesting than off-putting. I'd love to try this again with butter instead of oil. I doubled the recipe and produced 24 pancakes using a 1/2-cup measure to pour the circles. We have 4 left over in the freezer for school mornings. Yum! Thanks for making a great tasting pancake recipe for those of us who live too far from IHOP to go there often.

    These are pretty good. I like IHOP's better though. I LOVE their pancakes. always so perfect. I think maybe the canola oil I used was old? So it altered the flavor a bit. But the texture was pretty nice. They tasted a bit "floury" to me.. But still way better than anything from a box! This was my first time making any homemade pancakes. Ill make this again, using a good fresh oil. ***UPDATE: I made these again the other day, and instead of oil I used butter like one reviewer said, and they were AWSOME!!! These really are so soooo good! The best pancakes i have ever had! And they turn out so perfect. Usually I cannot cook a pancake without messing it up, but these were just great! I went back and gave it 5 stars!

    We LOVE these! Been making them with this recipe for years. Never liked pancakes until I made them this way. I recommend making these at least one hour early, if not the night before you want to serve them. This gives the baking powder time to react and it makes them nice and fluffy, I use a heaping teaspoon. Great recipe!!

    I haven't been to IHOP in years so I can't compare but these were excellent pancakes - light & fluffy! Since I had only 1 cup of buttermilk, I topped it up with 1% milk. Delicious with warm Blueberry Sauce (#78222). Thanx Mandy!
