Lentil Soup

Recipe #97004 | 1¼ hours | 15 min prep | add private note

Quick, tasty and healthy. Leave garlic cloves whole and it will melt nicely into the soup. Sprinkle grated Romano cheese on top to make it more delicious. Adding pasta to this soup makes it extra hearty and I strongly recommend storing leftover farfalle separately from the soup (as it tends to absorb all the liquid and get very soggy). This is my good friend Maxine's recipe and man can she cook!

SERVES 8 (change servings and units)

Ingredients

Directions

  1. 1
    Rinse dry lentils.
  2. 2
In large stock pot put lentils, carrots, celery, whole garlic, onion, chicken stock, water, olive oil, salt& pepper.
  3. 3
Bring to boil, then reduce to a simmer.
  4. 4
Cover and let cook for approximately one hour.
  5. 5
In separate pot, boil farfalle pasta.
  6. 6
When done, drain and add approximately one tablespoon of olive oil to keep pasta from sticking.
  7. 7
Cover the bottom of a soup bowl with cooked pasta and then fill with cooked lentil soup.
  8. 8
Sprinkle grated Romano cheese on top and enjoy.

Excellent soup! I didn't have farfalle pasta so I used macaroni. Easy to make too! DH said I could make this again.

Again, pretty good for a basic lentil soup. I think next time I might add some spices, (Basil? Thyme? Oregano?) but otherwise this was a very good easy recipe.

This was really yummy and VERY easy to make too! I left out the celery since i didn't have any, left out the pasta and had it with some slices of french bread! Very filling! Thank you so much for this recipe!
