Beef Slow Oven Cooked in Beer

Oven slow cooked beef with beer.

SERVES 4 (change servings and units)

Ingredients

Directions

    Preheat oven to 150C (300F).
  2. 2
    In large bag season the flour with salt and pepper.
  3. 3
    Coat beef in flour mixture.
  4. 4
    Heat half the butter and oil in large skillet over high heat.
  5. 5
    Brown meat in batches, removing to plate when browned.
  6. 6
    Add remaining butter and oil, reduce heat to med-low, cook onions for 10 minutes or until soft.

    Add tomato paste, bay leaves, mustard, sugar, salt and pepper, stir to combine.

    Gradually add beer, stirring constantly.

    Gradually add the stock, stirring constantly.

    Return beef to pan and bring to boil.

    Transfer to ovenproof casserole dish, cover and bake in oven, stirring occasionally, for 2 1/2 hours or until meat is tender.

    Scatter with parsley.

    Serve on top of mashed potatoes.

This was a hit with my boyfriend. I put this in a slow cooker after browning the meat and let it go for about 4.5 hours. I also just used a Busch Light beer since that is all I had. I added 3 cloves of garlic and added no yolk egg noodles at the end which soaked up alot of the liquid and also used about 1 tsp of cornstarch to thicken the sauce. My boyfriend said to keep this recipe!

    Oh, we loved this. I made it Sunday afternoon and put it in the fridge for Monday night dinner. I served it over Kielke Kielke and it was so so so good. I used Amstel Light beer (left over from my wedding in October). Not sure if it makes a difference or not. This is a keeper. I plan to do alot of cooking and freezing over the holiday long weekend and this one of the recipes I am going to use. Thanks for a wonderful and easy meal.

    We had this for dinner tonight- it was great on a cold night. I felt the beer was a bit too dominant, (I used a low alcohol lager) and would increase the sugar next time to maybe two tablespoons, and add some garlic and thyme.
