Hot Dog/Hamburger Buns/Rolls/Cinnamon Buns Dough Cycle A.b.m.

This the only recipe I use for everything now. If you live outside Canada your flour may not have the high protein/gluten that our Canadian milled flours have. You may wish to use bread flour. Makes delicious cinnamon buns also.

SERVES 9 -12 (change servings and units)

    Place all ingredients in order recommended by your bread machine manufacturer.

    Select dough cycle and start machine.

    I preheat my oven to 100°F and turn off.

    When dough cycle is complete remove from machine and proceed.

    I roll into a long log and cut into 12 pieces for hot dog buns or 9 pieces for large hamburger buns.

    How big you want them is up to you.

    For Hot Dog Buns, I roll out till they look like long skinny wieners,.

    Hamburger Buns, I flatten with my palm till about the thickness of a pancake. They rise beautifully and look as nicely shaped as store bought ones.

    Put on parchment-lined baking sheet so sides are almost touching.

    You can brush with melted butter if you wish but I never bother.

    Cover with cloth and put in the warm oven for 45-60 minutes to rise.

    When doubled remove from oven.

    I bake mine on the top shelf in my oven.

    Turn oven to 400°F and when you put the buns in the oven, reduce temperature immediately to 375° and bake hot dog buns 15 minutes and hamburger buns 17 minutes.

    CINNAMON BUNS. Use 1/3 cup sugar in recipe. Made 10 large buns.

    Roll out to about 12 x 15" and spread with butter or margarine. Sprinkle cinnamon-sugar mixture over all and roll up tightly. Cut into as many buns as you want. I make 10.

    Set oven to 400° and turn down to 375° when you put buns inches Bake 20 minutes.

I was just gifted a breadmaker, and love trying out different recipes with it... I wanted a multi-purpose dough since I was in the mood for hamburgers, and my BF wanted some cinnamon rolls for breakfast. I was almost out of milk so I used some re-constituted dry milk. I used only the 1/4c of sugar for the entire batch and bread flour. My dough seemed a little dry and heavy but smelled good when I removed it after the dough cycle finished. I shaped half of the dough into hamburger buns... I portioned it out equally into 6 balls and tucked the edges under and rolled. They looked beautiful. I did brush them with melted better before letting them rise the 2nd time. The other half, I rolled out and sprinkled with a cinnamon/sugar mix after spreading with butter. I got 9 good sized rolls with only half the batch of dough! I also let that rise and baked after the buns... The buns were tasty, just a little denser than I liked... the cinnamon rolls were also good, not too sweet, but also a little dry... Good multi-purpose dough, but I might try another to find one we love...

    Not sure why but my dough came out dry and the bread came out on the dense side. The next time, I will reduce the flour to 3 1/4 or 3 1/2 cups to see if it will come out less dense

    I love this recipe since I have all the ingredients on hand. It produces a soft, fine-textured bread which is very versatile. I've used this recipe to make hamburger buns, hot dog buns, cinnamon buns and a really lovely cheese and onion bread. I don't have a breadmachine so I just mix it all in my stand mixer after warming up the milk and oil in a small saucepan. I made very small cinnamon buns and they were really nice. I reduce the sugar to only a tablespoon or two for hamburger/hotdog buns and used 1/4c. of sugar for the cinnamon buns. I found using a 1/4c. of sugar for the savory buns made them too sweet for my tastes.

    I made only six burger buns but I like my buns large. I checked them at the 14 minute mark and the tops were a bit overdone in my small convection oven so I suggest that you should start checking them after 10 minutes. Also tried sesame seeds on some of the buns which works well. Excellent recipe and one of my better bun efforts.
