Summer Fruit Soup

This is nice refreshing dish to serve before a heavy meal or makes a great fruit dish for breakfast or brunch. This recipe comes from "Express Lane Diabetic Cooking" by Robyn Webb.

SERVES 4 (change servings and units)

    In a large bowl, combine all ingredients and chill for 1-2 hours.

    Top each serving with a dollop of fat-free sour cream and mint leaves.

Made for ZWT4...This was wonderful!!! I had all the fruit on hand to make it so I threw it together. The kids and I loved it. I used cantaloupe since I cannot seem to pick out a good honeydew.

    Like Rita, I skipped the sugar as the melon and strawberries were wonderfully sweet. Had this as a light refreshing dessert after a spicy meal. The yogurt and citrus come together with the ginger giving it a little zip. I garnished mine with the sour cream and a little more ginger as mint is not an herb we care for too much. We enjoyed it to the last drop.

    I made this with my Crystallized ginger "Candied" Crystallized Ginger , Ginger Syrup & Ginger Sugar. I skipped the sugar it didn`t need it. And being a Diabetic recipe I would think it should be skipped. The juice is a beautiful soft orange color. It had a nice tang which absorbed into the fruit. I ginger did fall to the bottom so I suggest saving some for the garnish. Paula, Thanks for a refreshing delightful soup!

    often make this type of dessert in the summer(I askip the ginger for myself-as Idon't like it)but use it for guests and the mint make it extra refreshing.As I have quite a few friends who are diabetic this is a great standby.
