Dill and Sour Cream Potato Salad

A different twist on "traditional" potato salad, this one is simple to make and delicious to eat. Cooking time includes overnight refrigeration.

SERVES 8 (change servings and units)

Ingredients

Directions

    Put potatoes in a large pan, cover with water, and boil until tender.
  2. 2
    Drain, and cut into bite-sized pieces, leaving skins on.
  3. 3
    Combine remaining ingredients in a large bowl.
  4. 4
    Add hot potatoes, and mix until well coated.
  5. 5
    Refrigerate overnight before serving.

    Hands down THE best potato salad I've ever had! My fiance raved about it too and he's not usually a potato salad fan. I made it exactly as stated and it is perfect! It's also inexpensive and ridiculously easy to make. This one's a keeper!

    Fantastic! I whipped this up for the hydroplane races tomorrow. It's in fridge melding as I type this. I haven't "officially" had any of it yet, but the couple of small spoonfulls I had to judge the seasoning was enough to tell me this is a keeper. So far I've gone by-the-book (I did use homade mayo. Why else have a blender?)but a half hour before serving I plan to hit it with a generous dusting of real Hungarian Paprika. Thanx for posting this great recipe. Pierre

    This is my favourite potato salad recipe. I love the taste of new potatoes, so I never want to overpower them with dominant flavours including mayo, eggs, and relish. The mayonnaise in this recipe is subdued by the sour cream, giving it a nice, light flavour. The addition of dill is perfect. I make this all the time!
