Hot Sausage and Vegetable Breakfast Casserole

Imho, you can't have enough recipes for breakfast casseroles! Especially when they are equally yummy for dinner. This recipe was adopted for Recipezaar.

Ingredients

  • 12 ounces mild bulk sausage (we use Jimmy Dean)
  • 12 ounces spicy bulk sausage (we use Jimmy Dean)
  • 10 egg, lightly beaten
  • cup sour cream
  • medium yellow onion, chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 zucchini, chopped
  • 16 ounces mushroom, sliced
  • cups cubed American cheese or Velveeta cheese
  • Directions

      Preheat oven to 350 degrees F.
    2. 2
      Cook sausage.
    3. 3
      Drain grease and set aside to cool slightly.
    4. 4
      In a large, deep baking dish (we use 9 X 13 baking pan) add sausage, eggs, sour cream, onion, peppers, zucchini, mushrooms and cheese.

      Stir very well to mix thoroughly.

      Salt and pepper to taste.

      Bake for 1 hour or until golden brown and eggs are set.

    YUM! This was excellent. Mine was a bit watery but the taste was awesome. I used spicy and mild sausage. I might use all spicy next time! I also used Velveeta cheese. Its creamier Thanks!!!

    This is OUTSTANDING!!! A breeze to prepare and great taste. I did not use spicy sausage as no one likes anything very spicy but me. I also used lowfat sausage and sour cream. I try to follow the South Beach diet and this fits into that plan very well. This would be fantastic Christmas morning with all the green and red vegies.. I will be making this repeatedly. Thanks for a keeper AnnetteMarie.

    Delicious! Followed the directions exactly using American cheese and savored every mouthful. I have actually made this several times and neglected to review it! Will make many more times too!

    Delicious!! We had this for dinner tonight and it was a huge hit. I made it exactly as written except that I used only one 8 oz. package sliced mushrooms. Also, I served this topped with sour cream and salsa. This is a great recipe for adding personal favorites such as ham, fresh spinach, etc. Thank you for sharing this fantastic, easy recipe. I will definitely be making this often. Congrats again on winning the football pool.
