Don't heat your kitchen up by turning on the oven! This recipe (from Cooking Light Magazine, May 2001) provides baking instructions, but these delicious salmon fillets also cook up in a snap on the George Foreman grill.

SERVES 4 (change servings and units)

    Combine pineapple juice, lemon juice, and salmon fillets in a large Ziploc bag; seal bag and marinate in refrigerator for 1 hour, turning occasionally.
  2. 2
    Remove fish from bag and discard marinade; combine brown sugar, chili powder, lemon rind, cumin, salt, and cinnamon; coat salmon fillets evenly with spice mixture; arrange fillets in a lightly oiled baking dish.

    Bake at 400° for 12 minutes or until fish flakes easily when tested with a fork.

I wanted to taste the pineapple juice but I couldn't. Next time I'll try to increase the pineapple juice. The cumin is a bit overpowering. It could be reduce a little bit. I didn't add salt. This is tasty a lot. And the salmon was moist and was in the oven about 12-13 minutes. Thanks Debs Made for Zaar Star Game

    There is a similar recipe to this one on here and frankly I like that one better. I just didn't enjoy the quantities of the ingredients as much. It was still good just not great. Sorry

    Wonderful flavor! I just made this tonight from one of my Cooking Light Annual Recipes--I was going to post it and found it was already posted. I cooked it on a gas grill, rather than roasting in the oven. I love salmon and this was a fantastic flavor combo to enhance it. Thanks for posting the recipe!

    I had just subscribed to Cooking Light and this recipe was in one of the first issues I received. This recipe is awesome and I don't usually like salmon!! The rubs is also good on halibut.
