Just Like Loaded Baked Potatoes (Low Carb)

This is an awesome low-carb version of loaded baked potatoes, and tastes far better than any version of mock potatoes that I have tried. In fact, this dish is soooo good, you will not believe it! I do not remember where I got this recipe, but it is a fabulous side to any low-carb meal. You will be pleased, I promise! Yum! Yum!

SERVES 3 (change servings and units)

Ingredients

    Pre-heat oven to 350.
  2. 2
    Chop cooked cauliflower into very small pieces.
  3. 3
    Mix sour cream, 1/2 of the green onions, 1/2 of the cheese, 1/2 of the bacon, and salt and pepper to taste in medium bowl.

    Stir in the cauliflower.
  5. 5
    Place in medium baking dish and sprinkle remaining cheese and bacon on top.
  6. 6
    Bake for 20 minutes.
  7. 7
    Sprinkle the remaining green onions on top just before serving.

I loved it.....will put it thru the food processor next time. Instead of the green onions we used garlic chives. also added fresh dill from the garden. Also cooked it on the BBQ instead of the oven....was yummy! Will be added to the menu rotation for sure.

    I liked these but my family wasn't crazy about them. I followed the recipe as written other then I didn't use green onions as we don't like them. I also used Hormel bacon pieces. This was something different but my family would rather have potatoes (and I am the only one that low carbs)

    AWESOME!! This was so good, the only thing I would do differently would be to puree the cauliflower so it had the consistency of mashed potatoes. Just a personal thing though!It was really a very delicious dish and we will be making it again. Well written and easy to follow recipe, thanks so much for sharing!
