A moist, very tender muffin that we all enjoy. I eat mine plain but they are also good with butter or jam. It is surprising how tasty they are without any spices, flavorings or zest but the buttermilk and oats really give this muffin its flavor. Please note that the oats need to soak for 1 hour before preparing the muffins so I've included that in the prep time.

    Soak oatmeal in buttermilk 1 hour; add egg and beat well.

    Add sugar and mix.
  3. 3
    Add cooled shortening.
  4. 4
    Add flour sifted with salt, baking powder and soda.

    Bake in greased muffin pans in hot oven (400 degrees) 15 to 20 minutes.

Ok so I added 1T. honey, 1t. cinnamon, and 1 grated granny smith apple; Perfect!! Loved them, will be making theese alot. Thanks.

    Very satisfying and as good as expected. I left them plain except I put a tsp. of vanilla in the batter for the last four muffins. Very tasty. Not too sweet.

    These muffins are wonderful!They are so moist and tasty.I added a small bit of vanilla and cinnamon,just to suit my tastes.I also added a few raisins.I've already taste-tested one.I could definately have another.Delicious!

    Very good recipe. Makes a perfect dozen. I added vanilla and 2 tsp chinese 5 spice. I also added 3 Tbs of wheat germ to increase the fiber and it turned out well. This is a great basic recipe to tweak to your tastes. Next time i think i will add cardamum, nutmeg and cinnamon.
