Pistachio Pudding Salad

My mom made this all the time and it was always a HUGE hit. I made it for my Stampede BBQ's and I can't count the number of people who asked for the recipe. Kids will love this as a fun salad at Thanksgiving or other special occasions. It's quick, easy and very tasty. Everyone will love this! Cooking time is chill time.
SERVES 8
Ingredients
- 1 (20 ounce) can crushed pineapple, drained
- 1 (3 ounce) package instant pistachio pudding mix
- 1 (8 ounce) container frozen whipped topping, thawed
- 5 1/4 ounces miniature marshmallows
- 1/4 cup chopped pecans or walnuts (optional)
Directions

In a large bowl, combine the pineapple and dry pistachio pudding mix.2
Fold in thawed whipped topping, marshmallows and optional nuts until well mixed.3
Refrigerate until chilled and serve.4
Cooking time is chill time.

mmmmm!!! Delicious!! The beauty of this salad/dessert is that you can make it your own. Using the pistachio pudding mix and cool whip, you can pretty much add whatever you want to it, and it comes out great. I made this yesterday, and added maraschino cherries, chocolate chips, mini marshmallows, and topped it with mixed nut pieces. Our 4 year old grandson, Owen declared it to be "delicious grandma!!!" so to me, that was the ultimate compliment!! Thank you for a great and easy summertime salad that is always a hit with everyone!!! It can be a salad, or a dessert!!!
