Ingredients
SALAD
- 1 lb macaroni (or small shells)
- 1/2 cup finely chopped celery
- 1/2 cup finely grated carrot
- 1/4 cup finely chopped onion (more if desired)
- 1/4 cup chopped green pepper (optional, see note at end)
- 6 hard-boiled eggs (reserve 1 to slice for garnish, and chop the remaining 5)
- paprika, for garnish
DRESSING
- 2 cups Miracle Whip
- 1/4 cup vinegar
- 3/4 cup sugar
- 2 tablespoons prepared mustard
Directions

Cook macaroni as directed on package; Drain& cool.2
In a bowl, whisk together the dressing ingredients so they are well-combined and smooth.3
In a large bowl, gently combine the macaroni, celery, carrots, onions, and remaining eggs.4
Fold the dressing gently into the macaroni salad mixture.5
Place into your serving bowl and garnish with the reserved slice egg and paprika.6
Let sit overnight for the best results.7
NOTE: It was not in the original recipe, but I sometimes add 1/4 to 1/2 cup chopped green pepper if I have it around.

Charmed, I found this recipe in my Amish & Mennonite Kitchens Cookbook. I enjoy cooking the Amish/Mennonite way, but was a bit disappointed how this salad turned out. I often buy the deli version at our Walmart Super Center, and I have to say, I much prefer it to the homemade. Even though I much prefer the store bought version to the homemade version, I am glad to see others here enjoy this recipe.

I wish I could give this more stars but perhaps it was the Miracle Whip that didn't give me the wow factor. I will try this again with Hellmann's mayonnaise and less onions since most of the family members didn't like them in the salad.

Well, I certainly will be making this recipe often this summer! This is the best macaroni salad I've had! I did include the green peppers, and the taste was amazing! Praise from my extended family as well, thank you!!
