Saucy Carrots

I am not usually one for cooked carrots, so I am not sure what possessed me to make these, but I am glad I did. The sauce is sweet and tangy, and the perfect accompaniment to the carrots. This recipe is courtesy of the Junior Leage of Little Rock. It serves 2 nicely, but you can easily double for more.

SERVES 2 (change servings and units)

Ingredients

Directions

    Slice carrot into rounds or chunks.
  2. 2
    Cover with salted water in saucepan, bring to a boil.
  3. 3
    Simmer 10 minutes or until tender.
  4. 4
    Drain.
  5. 5
    Meanwhile, combine remaining ingredients in small saucepan.
  6. 6
    Heat over medium, stirring constantly until blended.
  7. 7
    Pour sauce over carrots and gently toss.

    I don't often get comments from the family from the side dishes but I did on this one! Delicious and it easily served four people, though I did have a lot of other dishes going around. I made this as written and it was quick and easy to do on the back burner while the front ones were busy. Thanks Angela, this is a keeper!
