Cheddar Cheese Cornbread

Down-home goodness and a great cheese flavour!

Ingredients

  • cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • teaspoon baking powder
  • 3/4 teaspoon sugar (optional)
  • 1/2 teaspoon baking soda
  • 1 1/4 teaspoons salt
  • 1 1/4 cups buttermilk
  • large egg, lightly beaten
  • tablespoons butter, melted
  • 1 1/2 cups fresh corn kernels (or frozen)
  • cup grated sharp cheddar cheese
  • Directions

      Preheat the oven to 400F.
    2. 2
      Generously butter an 8 inch square baking pan.
    3. 3
      In a large bowl, stir together the cornmeal, flour, baking powder, sugar (if using) baking soda and salt.
    4. 4
      Mix in the buttermilk, eggs and melted butter.
    5. 5
      Stir in the corn kernels and cheese and scrape the batter into the prepared pan.

      Bake for 35-40 minutes, or until golden and a cake tester inserted in the center comes out clean.

      Let cool slightly in pan before serving.

    Very nice cornbread recipe! The texture was light and moist and the flavor was delicious. It was the perfect compliment to the potato casserole I served. Thanks Evelyn for sharing this recipe!

    Delicious! Instead of fresh corn, I used a can of Mexican Corn with red and green peppers. The sharp cheddar adds a nice flavor to the cornbread. We enjoyed this very much. Thanks for posting. Nick's Mom

    This cornbread has a fluffy cake-like texture, I would have to say that this is one of the better recipes for cornbread, it is really good I also added in some fine chopped jalapeno pepper, thanks Ev!....Kitten
