Balsamic Chicken Breasts With Peppers and Onions

Quick skillet chicken flavored with peppers, onions, garlic, basil and balsamic vinegar. Makes chicken very tender and dinner is ready in less than 30 minutes.

SERVES 4 (change servings and units)

Ingredients

Directions

    Season chicken with salt and pepper.
  2. 2
    In a large skillet, saute chicken in 2 tablespoons of oil over medium high heat, turning once for a total of about 8 minutes or until golden brown.

    Transfer chicken to a plate.
  4. 4
    Add 2 remaining tablespoons of oil to the skillet and cook peppers and onions, stirring often until just softened.

    Add garlic and stir for about 1 minute.
  6. 6
    Stir in basil and vinegar and return chicken and juices to the skillet.
  7. 7
    Reduce heat to low and simmer until chicken is cooked through, about 3 more minutes.

    Taste and adjust salt and pepper seasonings.

    Very nice! Only thing I changed was doing 1/2 of the balsamic vinegar & the other 1/2 in red wine vinegar (less powerful), cause some reviews thought it was too overpowering with balsamic. We love balsamic so I might try it next time as the recipe is written. Fresh basil was a very nice addition. It was enjoyed by all.

    marie, This is excellent. I used a non-stick skillet to cook the chicken and therefore did not add the extra oil when cooking the onion and peppers. The directions are easy to follow and the results are outstanding. Something I will keep in my cookbook.

    Excellent - beautiful as well as delicious. I was surprised at how much rich flavor the chicken had biven the small list of seasonings - but this was really quite wonderful. Easy to follow instructions and enjoyed by all tasters.
