Nifty Carrots

I got this from the Best of Bridge. I made it for Christmas and thanksgiving dinner in Korea and people raved about it. One male friend asked if I was making those awesome carrots when I invited him to Christmas dinner.

Ingredients

  • 1 (1 lb) bag frozen baby carrot or 6 peeled and sliced fresh carrot
  • 1/4 cup reserved carrot water
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup horseradish
  • tablespoons finely chopped onion
  • salt and pepper
  • 1/4 cup breadcrumbs (optional)
  • tablespoon melted butter (optional)
  • Directions

    1. 1
      Boil or steam carrots, reserving carrot water.
    2. 2
      I always steam them to preserve the carrot flavor.

      Place cooked carrots in a shallow casserole.
    4. 4
      Combine the rest of the ingredients, pour over carrots and mix.

      I use alot of horseradish because we like it.

      You can use less if you want.

      Note: The original recipe calls for bread crumbs mixed with the butter on top.

      I didn't care for it and I always omit this.

      If you want to try it, melt the butter, mix with breadcrumbs and sprinkle on top.

      Bake at 375 F.

      for 30 minutes or until horseradish sauce is bubbly.

    delish! i actually roasted my carrots in evoo, salt and pepper at 350 degrees for 15 minutes. I omitted the carrot water and added some dill and fresh parsley. I thought the breadcrumbs were the perfect addition. thanks for the unique carrot dish!! my dh hates carrots, but loved this!

    My friends now consider this my "signature Dish" I've kicked it up a bit and seem to vary every time.This is excellent, I recommend it.

    These carrots were fantastic!...made as directed, only I doubled the recipe, and used a little more than the specified amount of horseadish, we love that stuff!! as I had quite a few people to feed. These carrots went like hotcakes, everyone just loved them. Thanks so much for posting Cathy17, I will be making these quite often....Kittencak

    Nifty Carrots are really Nifty and Delicious. DH & I really enjoyed them. Love the horseradish It really gives them a good flavor. I did cut the recipe down for the 2 of us. I will be making them again soon for company. Thank you Cathy for the recipe.
