Lemon Blueberry Cake & Hot Honey-butter Sauce

The taste of my childhood, visits to my aunt in the east coast. Use wild blueberries if you can find them for an extra special taste.

SERVES 6 (change servings and units)

Ingredients

Hot Honey-Butter Sauce

Directions

    *Makes1 cup of sauce Preheat oven to 350 degrees.
  2. 2
    Cake Grease and flour a 8" square pan.
  3. 3
    Blend flour, nutmeg, salt and baking powder together.
  4. 4
    In a small bowl mix milk, lemon juice and rind together.
  5. 5
    In a large bowl cream butter with sugar.
  6. 6
    Gradually add 2 eggs, one at a time and then the vanilla, beating until light and fluffy.

    Add flour mixture, (3X) alternating with sour milk (2X), remembering to blend lightly.

    Gently fold in blueberries.
  9. 9
    Pour into prepared pan and bake at 350 degrees for 50 minutes.

    Remove from pan and cool slightly.

    Cut while warm into squares and serve upside down with Hot Honey-Butter Sauce.

    Hot Honey-Butter Sauce In small pan mix water and cornstarch blend well then gradually add honey, butter and lemon juice.

    Boil over low heat, stirring occasionally.

    When ready sauce is thick and clear.

    Pour hot sauce over the warm cut cake and enjoy.

    Down home comfort food.

Wowza! What a winner Baby Kato! The honey-butter sauce was the real kicker! I've had plenty of lemon-blueberry cakes in my day, but the sauce really made it shine! Straight to my "dessert" cookbook this one goes. Gosh I so love blueberries and the lemon flavour came through beautifully for a perfect balance! Will make again and again! Made for ZWT4.

    Oh my, this was yummy! I love blueberries so this hit the spot. Unfortunately, I did not have wild blueberries so had to settle for the regular. The cake was delicious by itself (yes, I couldn't wait to taste it until I had made the sauce) but, when you top it with the sauce, it is incredible! Made for ZWT4.

    Oh, gosh, BK, what a fabulous cake. Prepared for dessert tonight and was sorry I ate dinner. I should have gone directly to the cake, not passing GO! The cake is great, the sauce sent it out of the park! I must admit I did add a little zest to the sauce, but otherwise, wouldn't change a thing. Thnx so much for posting, BK. Made for ZWT4.

    This was an excellent recipe! The cake was moist and tasty. I thought the sauce and cake were a little too sweet and kept thinking the whole time I was making it...."I should add more lemon juice, I should add more lemon juice". I'm sorry I didn't as I prefer a tart lemon flavor with my lemon desserts. I did add more lemon to the sauce though and that made it much better. It was delicious and we did totally enjoy it. Made for Zingo for ZWT4 while touring around the world with my Babes.
