Something different for your next cookout.

SERVES 8 -10 (change servings and units)

Ingredients

Directions

    Combine bread, tomatoes and basil in large bowl.
  2. 2
    In food processor with metal blade, chop garlic and salt. Add rosemary, hot pepper flakes and vinegar.

    Add olive oil in a stream to emulsify.
  4. 4
    Toss bread mixture and dressing.
  5. 5
    Allow to stand for at least 20 minutes so the bread can absorb the dressing.

We loved this! I made it exactly as written except that I added some little balls of fresh mozzarella (which really didn't add much to an already great dish.) I'm planning a rendezvous with the left overs around midnight (just in case I don't have time for breakfast!) Thanks Richard!

    After so many 5 star ratings, I was disappointed in how mine turned out... maybe my bread was too soft, not crusty enough? But the bread turned to mush - almost pasty. It looked unappetizing and the texture was as unappealing. The flavors were ok - not sure I'll try it a second time. Sorry.

    When I first saw this recipe, I thought it would be like one of my favorite Middle Eastern salads, Fattoosh. No way! It's better, in a totally different way. Bursting with Mediterranean flavors, this salad is addictive. I used fresh rosemary and also used a healthy splash of balsamic vinegar. The tiny bit that was left over from my BBQ was taken to work the next day, where I had to carefully guard it in the break room. Yo, Richard, this one rocks!
