Ingredients

Dressing

Salad

  • 1 head lettuce, torn into bite-size pieces ((I use Romaine)
  • 3 large plum tomatoes, seeded and coarsely chopped
  • 1 English cucumber, peeled and coarsely chopped (the long, thin, almost seedless ones)
  • 1 medium red onion, cut into thin rings and soaked for 10 minutes in a small bowl of ice water to make it less sharp-tas
  • 1 small green pepper, cut into thin rings
  • 3/4 cup kalamata olive

    Toss with dressing.
  6. 6
    Sprinkle cheese over and serve.

Outstanding! I made exactly as directed except we left out the green pepper. Everybody loved it. I have already made another batch of the dressing (a double batch) to serve on a regular tossed salad. It's a wonderful, garlicky vinaigrette.

Terrific salad! I must confess that I didn't have any kalamatas on hand (is that a prosecutable offense in Greece??) but I followed the rest of this to a T. Loved the dressing--quite tart but really nice Will be having this again!

I made this for a girl's night tea party I held at my home. It was very good. The only thing I did different is to add a little salt to the dressing. My friend's loved it! Great recipe!
