Baked Chicken With Peaches and Sweet Potatoes

This is a very nice recipe I found on the web. The chicken comes out lightly sweet, it's low in fat, and it's very easy to prepare. I enjoyed it very much, will definitely make it again, and I hope you enjoy it too. Note: Although the recipe calls for peeling the potatoes, I leave the peel on.

SERVES 4 (change servings and units)

Ingredients

Directions

    Heat oven to 375 degrees.

    Arrange chicken in one layer in covered dish (I spray the pan with non-stick spray).
  3. 3
    Scatter potatoes and onions around chicken, sprinkle with salt and pepper, cover and bake for 30 minutes.

    Mix sugar, honey and juice; drizzle over chicken and potatoes.
  5. 5
    Bake uncovered 30 minutes longer, basting occasionally.
  6. 6
    Add peaches and gently combine.
  7. 7
    Bake uncovered 30 additional minutes more, basting occasionally.

    Arrange on platter and serve.

What a wonderful dish!I wasn't so sure about this dish when I first saw it, but I am so very glad I tried it. I sliced my potatoes thin, and it got done in record time. It just did have enough of the sauce to keep basting it. could have used more, but wow! If you haven't tried it, I recomend you do so!

    Good recipe. The chicken had a nice sweet taste. I think next time I will cover it at least another 30 minutes in order to help the potatoes to become more tender. Some of my potato slices remained somewhat crunchy. I did not have peaches and used 2 cups of fresh nectarine. That was very good and I think next time I will put in a little more of the fruit.

    A wonderful recipe. Everything had such a nice mild sweetness. After I read the other review about the potatoes still being crunchy after cooking for 1 1/2 hrs, I thought I better slice them fairly thin, which I did and they were just perfect. I used canned peaches, which were delicious mixed with the potatoes. I'll be making this often, it was so simple to prepare and so yummy. Thanks Charmed
