Leftover Mashed Potato Pancakes

This recipe was recently submitted to a news group to which I belong. I think it is very good and hope you like it, too. Preparation time in the kitchen is just a few minutes. When the big meal is through, this is a tasty way to use up the leftover mashed potatoes.

SERVES 2 (change servings and units)

Ingredients

Directions

  1. 1
    Mix all ingredients into mashed potatoes.
  2. 2
    Preheat skillet and add a couple of tablespoons of Crisco shortening or oil.
  3. 3
    Make sure the mix is not too thin.
  4. 4
    Pour 1/4 cup batter into hot pan; brown on both sides and enjoy with sour cream or applesauce.

    Enjoy!

I made these tonight. My family loved them. They were delicious and quick to make. I used both eggs. I didn't add cheese. I used 1/4 of a large onion. Next time, I will use 1/2 as this gives it more flavor. They fried fluffy.

    Great way to use left over mashed potatoes. I used both eggs but after looking at a few other recipes — including my Grandma's, I noticed most stated to seperate the eggs. So I did that. Mix ingrediets with the yolks, then when you are ready to cook, whip room temperature egg whites to a peak and fold into the batter. This makes the pancakes light and fluffy. Otherwise great recipe!

    Great way to serve leftovers! DH raved about them. I used two eggs and added grated Parmesan. The Parmesan was a nice touch but next time I will only use 1 egg. Thanks for the recipe!

    I liked this recipe but there are no measurements for the potatoes. I realized these are made using leftover but still there should be something. Like 1 cup of left over mashed potatoes per egg & 1/4 c flour mix. I had trouble keeping mine together when turning using 2 eggs to 3 cups of mashed potatoes. There wasn't enough binder.
