This bread is just so good, more like a coffee cake than a bread. I didn't have bread flour, so used regular unbleached, all-purpose flour and took it out about 3 minutes before the beeper because I like a less-crispy crust. Well, what a treat. Major keeper. Not only would I make it again, I think it would make some of the most awesome cinnamon roll dough, and I'm definitely going to try that very soon. I would also suggest using this bread to make Cinnamon Toast Deluxe, Cinnamon Toast Deluxe. A definite cinnamon extravaganza, and a wonderful treat, especially for those of you who are looking for a stronger cinnamon flavor.

    Place ingredients in the bread machine pan in the order suggested by the manufacturer.

    Bake using the sweet bread setting if your machine has it.
  3. 3
    If not, use white bread setting.

    When the bread is done, remove from the machine and let sit on a rack for 10 minutes before removing from the pan.

    If it sticks, just loosen the sides with a pliable, plastic spatula and it should slip out easily.

    This makes a 1 1/2 pound loaf that rose really nicely.

    I did check the dough about 5, 10 minutes into the kneading cycle; if you squeeze a good amount of the dough between your thumb and fingers and it seems a bit moist, and some dough sticks to your fingers, it should be just right; if not, adjust with water or flour accordingly.

This recipe turned out great. I made it last night and had a slice this morning, toasted with some butter. The crust was a little dark, but I believe that was my fault because I just got the machine yesterday. I will choose a lighter crust option next time. Thanks for the great recipe.

    What a wonderful bread! I was going to make cinnamon toast with this, but realized as I was buttering it, it didn't need anything extra. DH called out to me, telling me what wonderful bread it was (a rarity). I made exactly as stated (except I didn't soften my butter, so my machine did the cold butter dance across the counter). I was worried that it wouldn't fill my 2 pound machine enough to make a decent loaf, but didn't have the time to use the dough cycle and put it in the oven. It was perfect! It filled my machine 3/4 way with a perfectly shaped loaf, instead of one of those weird off-center loaves I sometimes get with smaller recipes. Thank you so much for posting, this is definitely a keeper!

    This is so good. I have a cinnamon sugar bread machine recipe and I'll definitely replace it with this one. I baked mine on the light bread cycle. I totally agree that this would make excellent cinnamon rolls and I plan on trying it soon. Thanks for a delicious recipe. It is a keeper.

    Mmmm, mmmmmm, goooooood! The only change I made was to use an extra 1/4 tsp. cinnamon. The entire house smelled wonderful while this was baking. We couldn't wait to try it, so we snuck a sample as soon as it came out of the machine. Three other people have sampled from this loaf, and I've received rave reviews from all of them. Next time, I may try adding another extra 1/4 tsp cinnamon and maybe some raisins to see how it will turn out. I've added this one to my cookbook so I don't "lose" it. Thank you so much for sharing this simple recipe!
