Breaded 'n Baked Zucchini Chips

No frying makes for a healthier veggie dish. This is so good I could eat it for a main meal instead of a side dish.

SERVES 4 (change servings and units)

Ingredients

Directions

    Preheat oven to 450°.
  2. 2
    Combine egg, milk and garlic in a shallow dish and set aside for about 15 minutes to let flavors combine.
  3. 3
    Combine breadcrumbs, cheese, parsley and pepper in another shallow dish.
  4. 4
    Dip zucchini slices into egg mixture, then into crumbs and place on a baking sheet that has been sprayed with nonstick cooking spray.

    Bake for 10 minutes, then turn over and bake for 5 minutes more or until brown and crispy.

    well, i made these from pre-sliced zucchini i had frozen a couple months ago in the freezer, so they were a bit thinner than the 1/4" in the recipe--closer to 1/8". but i definitely didn't have a problem with them coming out mushy. i used 1 t. of jarred crushed garlic and that was probably a bit too much--1/2 t. would've been better. also, i cooked an additional 5 mins. on the first side since they were frozen when i dipped and coated them (i slammed them in the bag against the counter to loosen them up and knock some ice off them. they separated even more easily after a few minutes). not quite carl's jr. caliber (my gold standard), but pretty close--will try again with thicker slices. just wish they weren't so much work--drive thru is wayyy easier!

    These were very good but I think the only change I would make was to put garlic powder into the breadcrumb mixture next time instead of the crushed garlic. I really liked them and they were nice and crispy but I wanted a little more garlic flavor. i also served a ranch dip with them, very good will make them again.

    Delicious, Marie! Always thrilled when I can enjoy breaded foods without deep-frying them. Very flavorful and nicely browned- enjoyed them with Ranch dressing. Will definitely be making these again! Thanks for the recipe!
