The Lady's Perfect Scrambled Eggs ( Paula Deen )

This is from Paula Deen's The Lady and Sons restaurant in Savannah, Georgia. My son prompted me on a quest for tender, perfect scrambled eggs, and this is the best I've found. I like my scrambled eggs firmly cooked, but these still stay tender. They are perfect!

SERVES 4 (change servings and units)

    In a medium sized bowl, beat eggs, sour cream, water, and salt and pepper until fluffy.
  2. 2
    Using a nonstick frying pan, melt butter and cook eggs over low heat, stirring occasionally, until just set.
  3. 3
    Stir in the cheese just before serving.
  4. 4
    Cook until you reach desired consistency.

These are great-tasting scrambled eggs. They turn out just like I like my eggs. They are cooked well, but are still moist and full of flavor. I sprinkled some extra cheese on top when serving. Thanks for posting.

    I gave this 2 stars. My family just didn't care for these eggs. My 5 yrs old newphew & 7 yrs old niece said the eggs were "Yucky". I thought they were ok. I made them for our Sunday Big Breakfast. The only change I made was I cut the recipe in half. I'm sorry we just won't be having this recipe again. Thanks christine (internetnut)

    Delicious! The description is right on...tender but fully cooked, the sour cream gives them a great texture. To die for with ConnieK's Southern Grits #90322. Thanks Connie (and Paula)!

    Used homemade yoghurt and cornflour instead of the sour cream (dont get this in India) and also added some cilantro and pepper powder for garnish. Nummy! Fay
