Lemony Yellow Pea Soup

To make this typical north African soup use yellow split peas, its the secret ingredient according to my colleague. This makes a wonderful lunch served with garlic bread and a light fruit salad.

SERVES 4 (change servings and units)

Ingredients

Directions

    Cook the peas and the celery in the chicken stock for 45 minutes.
  2. 2
    Once the peas are tender, puree.
  3. 3
    Add the seasonings, lemon juice and flour to the melted margarine, adding small amounts of the soup to thin (if necessary).

    Add the margarine mixture to the soup and simmer 15 minutes before you serve.

Yum! Loved this soup, and loved that it had no meat in it.....not that I have anything against meat, but sometimes I just decide to make a soup and have no thawed meat on hand. That was the case this morning. I made it exactly as written, but thinned it out a little at the end with some (maybe 1 cup?)water. Hmmm.....that was after I had thickened it...duh! Anyway, the result was delicious. Thanks Baby Kato!

    Since my DS eats soup in all seasons I made this soup to freeze. I added in onions and lots of garlic when sauteeing the celery, also lots of black pepper. Great soup with flavors that blend well together. Thanks BK!...Kitten

    This needed something. Maybe it was the broth that I used, but my soup turned out a little too bland. Nice consistancy after I blended it with the hand blender. I agree with Stardustannie, it really only is 2 servings (unless you used it as a starter and had tiny portions)

    Mmmmmm A filling soup with refreshing flavours. The cumin and lemon give this pea soup a real lift. Instead of thickening the soup I ended up adding another cup of water to get the consistancy I like. I'd recommend you double the recipe if you're wanting 4 full serves.
