German Cucumber Salad with Sour Cream

This is a very light, tasty salad, and not sweet like many cucumber salads. It's very refreshing with a tangy bite from the green onions. I used dried herbs, of course using less, and it was still very tasty. I got the recipe many years ago from a recipe board online, but do not remember the source. However, it was attributed to a man who made this for his guests at an inn he ran in Germany. I included slicing the vegetables in the approximate time.

SERVES 6 (change servings and units)

Directions

    In a bowl, combine all the salad ingredients.

    In another small bowl, mix together well all the dressing ingredients.
  3. 3
    Pour over the cucumber salad mixture and toss gently.
  4. 4
    Cover and chill for at least an hour.

I love this salad-indeed, it is very refreshing! I followed recipe exactly except I did not have any parsley and I used dried dill and the salad was still delicious. Will include fresh herbs next time. Love the dill flavor. Served w/ brats, hot german potato salad, and baked beans. Thank you for a great recipe!!!

    Wow, was this ever good. I didn't have any fresh dill, but dried worked just fine, also I only had grape tomatoes, which to me worked just great. All the ingredients seemed to blend so well together, giving this salad a wonderful flavor. Thanks for a keeper Charmed

    We love cucumbers and this is a great way to use them. I've made this dish twice and both times haven't had tomatoes on hand but I'm sure with the addition the salad will even be that much better. This will be a regular at our house!
