A classic. Just had them tonight, with champagne. I like them light on the creme de cassis--in fact, I think the amount of creme de cassis should go up as the quality of the wine or champagne goes down, if that makes any sense?!

Served the Kir in wine glasses, after dinner. Will try with the champagne next time, and serve in flutes. Thank you Gay, for this classic!
