Cottage Cheese Roast (Vegetarian Meatloaf)

Great vegetarian comfort food! Don't be fooled by the ingredients; the flavor is very much like meatloaf. Kitchen alchemy at its finest!

SERVES 8 (change servings and units)

    Preheat oven to 350 degrees F (175 degrees C).

    Grease a loaf pan.
  3. 3
    In a large bowl, combine cottage cheese, eggs, vegetable oil, soup mix, walnuts, cereal and onion.

    Spoon into prepared pan.
  5. 5
    Bake for 60 to 70 minutes.
  6. 6
    Let the 'roast' rest for 5 to 10 minutes; turn out onto serving platter.

I'm quite impressed with this recipe. I only made one ingredient change, which was adding dried onions instead of fresh. This is easy to make and all 3 of my kiddos love it. DH is very much a carnivore and even proclaimed it 'ok'. Instead of making this in a loaf pan I portioned it out into muffin cups. I froze the leftovers but I haven't tried the frozen portions yet (I'll post on the outcome of this once I try it).

    I really wasn't sure what to think of this. I subbed a packet of italian dressing mix in place of the soup mix and crushed cheez-it crackers instead of the corn flakes and crossed my fingers. It honestly came out of the oven looking pretty unappealing so I slathered some BBQ sauce over it and served it up. I was totally and happily shocked by how tasty and hearty this was. It was really comparable to tasty meatloaf!

    I've been making this delicious & somewhat bizarre recipe for a few years. It's quite nutritious and couldn't be easier to make. I use pecans or sunflower seeds instead of walnuts, and small curd cottage cheese seems to work best. I line the loaf pan with parchment and removal (& cleanup) is a breeze. I often use leftovers in sandwiches. Thanks for posting, Connie!
