Crispy Potatoes With Bacon, Garlic and Parsley

I am always searching for new ways to serve potatoes. This recipe is courtesy of the Food Network's "How to Boil Water".

SERVES 4 (change servings and units)

Ingredients

Directions

    Put the potatoes and salt in a medium saucepan and cover with cold water.
  2. 2
    Bring to a boil over high heat and simmer for 1 minute, then drain and pat dry.
  3. 3
    In skillet, saute bacon over medium heat and cook until crispy.
  4. 4
    Remove bacon with a slotted spoon and set aside on paper towels.
  5. 5
    Add butter to bacon fat and increase heat to medium.
  6. 6
    Add potatoes to pan so that the cut sides get nice and brown.
  7. 7
    Cook, turning only as needed until the potatoes are golden brown, about 25 minutes.

    Stir in parsley, garlic and bacon and stir until lightly browned.
  9. 9
    Season with salt and pepper to taste.

Fantastic! Everyone loved these! Nice that they're made entirely on the stove. I browned them quite a bit until they were nice and crispy. Wouldn't change a thing. Thanks for sharing the recipe!

    Marie, these potatoes were excellent! They were perfectly done in the time you specified and I added nothing to change the recipe. I served with my own fried corn and I grilled a ham steak using MizzNezz's glaze #26792. All incredible! Thanks so much! We enjoyed every bite!

    We loved these potatoes Marie, although I did add more fresh garlic than stated (about 1 Tbsp!)..they were crispy and delicious..I will make them again, great potato recipe!... thanks for posting.....Kittencal
