Easter Nests with Jelly Bean Eggs

Originally from a peanut butter company, these no-bake treats are easy and oh-so-fun for the kiddos! :o)

1 dozen (change servings and units)

Ingredients

Directions

    Break chow mein noodles into small pieces; set aside in large mixing bowl.
  2. 2
    Combine sugar and corn syrup in large saucepan.
  3. 3
    Cook on medium heat until the sugar is melted and there are bubbles at the edge of the pan.

    Add peanut butter and stir until smooth.
  5. 5
    Pour peanut butter mixture over crunched up noodles; toss until completely coated.
  6. 6
    Let cool slightly to avoid burns.
  7. 7
    Butter hands lightly and use approx 1/4 c.
  8. 8
    mixture to form a compact ball.
  9. 9
    Make indention in the middle of each ball to resemble a bird's nest.

    Place on waxed paper and let cool completely.
  11. 11
    Place 2-3 jelly beans inside each nest.
  12. 12
    Serve on a bed of green-tinted coconut for extra festive look.

I changed the serving size to use an entire bag of noodles. This recipe made over 2 dozen nests for me. The mixture was kinda goopy too. Not sure what happened but I had to add more noodles to make them stay together. I still think they are going to be pretty cute. As far as the taste, not that great, but the look makes up for it!

    I give this 5 for appearance and 4 for taste. I wasn't crazy about the taste but the kids said they were pretty good, must be a kid thing I guess. They looked so pretty. I did add a splash of vanilla to them. I used Jolly Rancher jelly beans. I scaled the recipe to 1 1/2 doz. which then calls for 6 cups of chowmein noodles which equals 1 whole 12 oz bag. Would make for the kids again at Easter.

    What a fun Easter treat! I'm a huge fan of peanut butter and loved the flavor, but they are pretty sweet so next time I will probably try to make them a bit smaller. Thanks for posting this cute, festive recipe!
