This is a great summer salad. Lovely served with fresh fruit and crusty bread. Easy recipe to double. Use more or less shrimp your preference.

SERVES 2 (change servings and units)

Directions

    Blend mayonnaise into a bowl with the ginger, lemon juice, curry powder, eggs and green onions.
  2. 2
    Add salt and pepper to dressing, cover and refrigerate over night.
  3. 3
    When you are ready, peel the shrimp.
  4. 4
    Peel and slice the avocado and cucumber.
  5. 5
    Arrange the lettuce leaves and cucumber on plate.
  6. 6
    Spoon the dressing over top of the shrimp and avocado and add to lettuce and cucumber.

My DH was so impressed by the presentation on this (I also included fresh sliced tomatoes) and I loved the dressing though I added cumin and oregano for a Mexican flavor in place of the ginger and curry. It made a great light dinner and would be very refreshing in the summer!

    OUTSTANDING! I especially loved the dressing with the candied ginger. I did not realize that the dressing should be made in advanced so I did not give it time to let the flavors marry, but it was still wonderful. Going into my favorites cookbook.

    What a nice light meal. Made lettuce wraps with them. Put some dressing on a butter lettuce leaf, one shrimp, a slice of avocado and cuke. Rolled up and enjoyed. Perfect for a hot summer night!

    I actually made this salad using cooked grilled chicken strips that I keep in my freezer, in place of shrimp, the dressing from this is absolutely wonderful, which made this recipe a definate 5 star plus, thanks Baby K!...Kitten
