Sausage Breakfast Muffins (OAMC)

Recipe #87629 | 45 min | 30 min prep | add private note

This is a recipe I found online and adapted to suit my family's taste. You can use either Chorizo or regular bulk breakfast sausage, depending on your tastes. They're both good. If you like spicy foods, add a 4 oz can of chopped and drain green chilies.

SERVES 48 (change servings and units)

Ingredients

Directions

  1. 1
Line muffin tins with paper liners, and set aside.
  2. 2
    Fry, crumble and drain sausage.
  3. 3
    Preheat oven to 375 degrees.
  4. 4
Mix together bisquick, cornmeal, eggs, and milk.
  5. 5
Add drained sausage, and cheese, and stir well.
  6. 6
Ladle the filling into the prepared muffin tins, filling almost to top.
  7. 7
    Bake for 11-15 minutes.
  8. 8
    Allow to cool completely.
  9. 9
Store in freezer in a large airtight container.
  10. 10
Or place each in a sandwich bag, and then place a dozen in a large ziploc bag.
  11. 11
Microwave on high for approx 90 seconds.

I made this exactly as stated except I cut it in half. School is out and my boys really loved the fact that they can pull one out of the freezor and "nuke" it for their own breakfast. Next time I think I will add some bacon to it. Thanks for sharing.

Great! I halved the recipe to try it and we love it! I will make more with the leftover bacon and green onions I have. THanks!

I made these without the green chilis for the kids. I would love to experiment more with peppers, onions, etc. Mine seem to stick a little to the liners - next time I'll try without. My daughter has requested some for her freezer at college!

My 7 kids helped me make these lastnight. We used cornmuffin mix instead of cornmeal. I made another batch with ham in place of sausage. We used bakers joy spray after the first batch stuck. I am trying to post the picture. The kids love them.
