Frosted Cauliflower

I got this recipe from my mother who happens to live in a retirement facility in Atlanta, GA. When she served it to me, I knew I had found the best way to serve one of my favorite vegetables. I can eat this dish until I can't move.

SERVES 6 (change servings and units)

    Remove woody core from base of head, leaving the head whole.

    Cook Cauliflower in 2 T. water in a 1 1/2 quart covered glass dish in microwave oven for 6 to 7 minutes per pound.

    Rotate dish 1/4 turn halfway through cooking time if you don't have a turntable.

    (This can be done in a regular oven also by cooking until just tender.) Let the Cauliflower rest, covered for 5 minutes.

    In a small mixing bowl, combine the next 3 ingredients and heat them in the microwave for 1 minute.

    Frost the entire top surface of the cauliflower with the mixture and sprinkle with the grated cheese.

    Return to microwave and cook until cheese melts.

    If desired, you may sprinkle with paprika for color.

My DH prefers mustard whereas my preference is mayo and we both loved this! So easy. I didn't read closely though and put the cheese in with the 3 ingredients. So I just nuked it all which may be easier than trying to sprinkle the cheese on top of everything. Thank you, we will enjoy this often.

    I have been making this for years. We Love it! It is a quick and delicious side dish. I do add a little minced onion to the mayo mixture. Do try this great dish.

    Cauliflower with a little tang and zip! We really enjoyed this. DH and I ate almost 1/2 of a small head of cauliflower. I used low-fat mayonnaise, coarse-grain mustard and 1 cup fresh shredded cheddar. I drained the cauliflower before 'frosting' and did the final heating uncovered. This is a keeper.

    This was a great way to fix clauliflower! It was so fast and easy. However in the future, I will cut down on the amount of mayonnaise used. I assumed it would kind of melt off in the microwave but it really clung and was a bit too mayonnaisey for my taste.
