Easy Banana Muffins

Ingredients

Directions

    Mash bananas, add sugar and the slightly beaten egg.

    Stir in melted butter.
  3. 3
    Stir in dry ingredients.

    Spoon into medium size muffin pan (I use the paper muffin cups inside pan).

    Bake 20 minutes at 350F degrees - 375F degrees.

These were good. My kids loved them. Probably because I added about 3/4 cup of mini chocolate chips. It also made me feel good because I used 2 bananas that were about to go bad and 1 out of the freezer.

    Very easy recipe with great results! I made a few small modifications - I used 1 cup all-purpose flour & 1/2 cup whole grain oat flour. I added 2 Tbsp of ground flax seed. I did not use salt or chocolate chips, but I did use 1/2 cup of chopped walnuts. I also sprinkled the tops with cinnamon sugar mix before baking. Easy enough to make before my daughter even got out of bed - warm muffins for breakfast, yum! Baked at 375 for 20 min.

    This is a fantastic recipe — only one bowl required, and you can mix it with a spoon! (Those are my criteria). One note — I mix the dry ingredients together before adding them in order to avoid soapy baking soda clumps.

    I love Banana muffins and this recipe was GREAT! Easy, moist and delicious! I baked mine at 350F and added applesauce instead of all the butter (more healthy) and it turned out wonderful! Thanks for a great recipe!
