Have to agree with the rest . . . these are very tasty! Served them with a wasabi-ginger musteard. :yummy: Made them for a potluck and since there were kids there left out the hot sauce. Next time I'll add the hot sauce. So that the kids would eat them, called them Monkey Food. Only had 16 oz. of spinach so reduced everything by 20%. It did take 25 minutes to bake. Thanks for sharing!

Made for March, 2008 Bevy Swap. These spinach balls are unbelieveably good. I loved everything about them. The texture is perfect and all the flavors blended nicely together. I only made half a batch, but I used a 6 ounce box of Stove Top Traditional Sage stuffing and four eggs. I left out the Accent seasoning but did add the hot sauce. The spicy mustard sauce was the perfect compliment to the spinach balls. I added approximately 2 or 3 tablespoons of honey to the sauce while it was simmering. I thought it was going to be too runny, but it thickened up nicely while as it was cooling. I can't wait for our next covered dish luncheon at work so that I can surprise everyone with this delightful appetizer. Thanks for sharing a great recipe, Baby Kato.
