Vinaigrette Salad Dressing

This quick salad dressing is a great way to top off individual tossed salads. Recipe source: Bon Appetit (February, 1981)

Ingredients

  • tablespoon wine vinegar
  • tablespoon lemon juice
  • tablespoon Dijon mustard
  • tablespoon chopped fresh chives or tarragon
  • salt and pepper
  • 6-8 tablespoons almond oil or walnut oil
  • Directions

      Combine first 5 ingredients (vinegar- salt& pepper) in small jar, shake well.

      Whisk in oil.

    Very good dressing! I used dried chives(1/2 tbsp.). I really like the Dijon flavour. I just put everything in a bowl and beat it with a whisk. So fast and easy!

    Delicious dressing Ellie...I made this with chives and almond oil, over spring greens, green onions and avocado, it was wonderful...thanks for posting!

    Great flavor for very little effort, this shows how making homemade dressings is quick and better tasting than store bought. I used tarragon and walnut oil and could not be more pleased with the results. I got 4 servings from this recipe. Our salad had baby greens, English cucumber and red onion slices. I served it to a friend who makes fantastic vinaigrette and she was raving over this. Thanks for making me look so good!
