Kittencal's Ranch Pasta or Potato Salad

I have made this many times over the years for large gatherings, everyone loves it and I am always asked for the recipe --- the dressing is wonderful with cooked pasta or about 2-1/2 to 3 pounds of potatoes, you may of coarse double the amounts to feed more people --- all ingredients may be adjusted to suit taste, plan ahead this salad needs to chill before serving --- prep time does not include cooking the pasta or potatoes or eggs, cooking time is chilling time --- you will LOVE this!

SERVES 4 -6 (change servings and units)

Directions

    In a large bowl, combine the cooked pasta or cubed potatoes with peas. celery, green onions, cheddar cheese and chopped eggs and cooked ham (if using) toss to combine.

    In a small bowl, combine relish, mayo, ranch salad dressing and mustard and garlic powder (if using) mix well then add to macaroni mixture; toss to coat, then season with salt and pepper.

    Add in chopped yum yum pickles if using; mix to combine.
  4. 4
    Season with more salt and black pepper to taste.
  5. 5
    Cover and refrigerate for 3 or more hours to blend flavors (the longer chilling time the better!).

    Delicious!

We entertained my husband's coworkers this summer, since they don't have a company picnic or anything. I made this as one of the side dishes, and I wish I had made double or triple! It went like lightning. I think people took it as a main dish instead, because my husband didn't have to do too much grilling! Always a pleasure making one of your recipes. Keep on posting, and I'll keep on cooking! Thanks so much!

    All the guests at my BBQ gave this salad a 5 star rating. I used whole wheat macaroni for the pasta, I will try it with potatoes next time for a change. Thanks for sharing Kitten.

    Okay KITTENCAL, I don't think that you have one recipe on this site that is less than 5 star quality! this is the best mac salad that I have ever had, I like it just as much as your coleslaw recipe, this deserves way more than just a 5 star rating, it is THAT good, we ate the whole bowl, and loved every mouthful! thank you so much for all of your fantastic recipes!
