Healthy Fresh Fruit Salad

SERVES 4 (change servings and units)

Ingredients

  • 4 cups fresh fruit (strawberries, grapes, kiwifruit, passionfruit or any fruit in season)
  • 1-2 fresh mango (or tin if fresh arn't available)
  • 1 cup plain yogurt (low fat is fine)
  • 1 tablespoon honey

Directions

  1. 1
    Mix fruit and divide into 4 serving dishes.

    Blend mango until smooth.
  3. 3
    Add yoghurt and honey.
  4. 4
    Place yoghurt mixture in jug and refrigerate.
  5. 5
    Serve over fruit.

Another great recipe to support my mango habit! My mango was very sweet and 1 T honey was perfect. We ate it for breakfast, served atop fresh peaches and raspberries and sprinkled with granola. Tasted more like a great dessert than a healthy breakfast! Thanks for sharing!

    Delicious and perfect with our grilled steaks - we used mostly berries (strawberries, blackberries and blueberries) with a sliced peach and a sliced apple. Next time I may try a different combo of fruits as any combo will work out wonderfully. I am having the leftovers for breakfast! Thanks for sharing!

    As we were eating this my DH kept saying, "ummm... this is good!", over and over. I used 3 cups of fresh strawberries and 1 cup of green grapes and since the mango blend was a light orange it was pretty and colorful as well as tasty. I did add 1 package of sweet-n-low as I prefer a sweeter taste. I had not sweetened the strawberries so maybe that was why I felt I wanted it sweeter.
