These are from Ina Garten's Barefoot Contessa book. They are wonderful!

18 large muffins (change servings and units)

Ingredients

    Preheat oven to 350°F.
  2. 2
    Line 18 large muffin cups with paper liners.
  3. 3
    Sift the flour, sugar, baking powder, baking soda, and salt into the bowl of an electric mixer fitted with the paddle attachment.

    Add the melted butter and blend.
  5. 5
    Combine the eggs, milk, vanilla and mashed bananas, and add then to the flour-and-butter mixture.
  6. 6
    Scrape the bowl and blend well.
  7. 7
    Don't overmix.
  8. 8
    Fold the diced bananas, walnuts, granola and coconut into the batter.
  9. 9
    Spoon the batter into the paper liners, filling each one to the top.
  10. 10
    Top each muffin with dried banana chips, granola, or coconut, if desired.

    Bake for 25-30 minutes, or until the tops are brown and a toothpick comes out clean.

    Cool slightly, remove from the pan, and serve.

These look nice and taste fine. I made these to use up unwanted Kashi Go-Lean cereal. I replaced the 1 c. of walnuts with a second cup of cereal. I don't really like the crunchy addition, but that's my personal preference. I wouldn't make these if I wasn't trying to use up granola, but these are a good way to get rid of unused cereal. These made 27 regular-sized muffins. I baked them for 17 minutes.

    Wow, these were fabulous. I took them to work and they were all gone in minutes. I have taken many many muffins into work and these are the best banana ones . Thanks

    These were fabulous. I saw the post from Pamela and decided with my excess of bananas I would make this. WOW, they were fantastic. We had visitors over night and we had these for breakfast and they all raved over them and wanted the recipe. I used the granola, which had almonds in it, so instead of using walnuts, I just added more granola. I also didnt use any coconut, but cant wait till next time, because I will put it in. I didnt add anything on the top, although I wish I had so it would have had a crunch to it. Thanks for posting these. And as a side note, use the muffin paper liners, I didnt and they were very messy to get out of the pan. This also made more than 18 for me.

    Yum! Thanks for suggesting this recipe to use up my bananas. These muffins were a great hit! I loved the addition of granola. The only change i made was to use butter milk instead of whole milk as I had some that needed to be used up. Thanks again, I have added these to my OAMC muffins collection as these froze well too!
