Tzatziki Cucumber Dipping Sauce

Greek sauce/dip/salad dressing. Serve with vegies,Pitas,or with spicy dishes.

6 cups (change servings and units)

Ingredients

    Line a sieve with a double thickness of dampened cheesecloth.

    Spoon in yogurt and set the sieve over a bowl.
  3. 3
    Refrigerate for two to three hours or until yogurt is about half its volume, nicely thick and creamy.

    Shred or cut cucumber into julienne strips.
  5. 5
    Place in a colander in sink or over a bowl, sprinkle generously with salt, mix well and let drain for at least 30 minutes to an hour.

    Rinse and gently pat dry.

    In a mortor and pestal muddle the garlic into a bit salt.
  8. 8
    Add to the thickened yogurt, cucumber, lemon juice, olive oil, and if desired, the pepper and mint.

    Mix well.

    Serve or refrigerate for a day or two so flavors mingle.

    Stir again before serving and sprinkle with additional minced mint leaves if desired.

Great post, Rita! May I add a few ideas? As another reviewer added, if you use the greek variety yogurt, you don't need to drain. Otherwise, draining is essential! Also, love the idea to drain the cucumbers. I didn't quite have time so I shredded and used paper toweling. And lastly, skipping the mint in this recipe is a crime! Dill is lovely, but there is no substitute for Mint, Cucumber and Yogurt!! Thanks again!

    Love it! If you don't have cheesecloth, try 2 paper coffee filters. Worked great!

    The secret to this is straining the yogurt (in my case the non fat variety). Makes for a thick and creamy condiment with a wonderful complement of flavors. I diced my cucumbers and added a tablespoon or so of grated onion. Really prefered this to Tzatziki dishes made with sour cream. Served mine along side Greek Lamb Brochettes Greek Lamb Brochettes.
