Avanti's Sweet Bread

This tastes like the bread from Avanti's Italian restaurant in Bloomington Illinois.

SERVES 4 (change servings and units)

Ingredients

Directions

    Dissolve yeast in warm water.
  2. 2
    Mix oil, eggs, salt and sugar together till blended.
  3. 3
    Add flour one cup at a time, mixing well after each addition.
  4. 4
    Knead till smooth and elastic.
  5. 5
    Let rise till doubled, about 1 hour and 30 minutes.

    repeat the kneading and rising.
  7. 7
    Punch down.
  8. 8
    Cut dough into 2 pieces.
  9. 9
    Let rise, covered for 10 minutes.

    Shape into 2 oblong loaves, about 14 inches long.

    Place on greased cookie sheets.

    Cover: let rise again, about 50-60 minutes.

    Cut slash down middle of bread or 3 slashes diagonally on top.

    Bake at 350 for 20 to 25 minutes.

For those that haven't tried Avanti's Sweet Bread in Bloomington, IL and enjoy breads, do yourself a flavor and stop into Avanti's if you're in their vicinity when you travel. For bread connoisseurs it is certainly worth your visit. This recipe is very similar to their homemade sweet bread. Thank you, Marie for sharing such a great recipe. Your hours of tinkering in your kitchen will certainly make allot of people happy with this recipe post.

    We have an Avanti's here, but we haven't gone very often in the past 2 years, so I can't remember how the bread there tastes. Regardless, this bread is yummy. I have only made it twice and need to work on it more. I don't know how to roll out the dough, but I'm getting better! Friends from church brought this over when we had our last baby, and his bread was phenomenal! He suggested using the KitchenAid stand mixer to knead the dough, and that made it even easier. I will keep working on this until it's as good as the bread that was first given to us.

    I have never eaten at Avanti's so I don't know if this tastes authentic, but it is a lovely, tender bread. Although I tend to lean toward dense, hearty, crusty loaves, there are certain meals that scream for this type of sweet loaf. Definitely will have a place in my bread repertoire--thanks for sharing the recipe!
