Rosy-Peach and Banana Jam

Yummy jam with peaches, bananas and cherries.

7 cups (change servings and units)

Ingredients

Directions

    Combine the peaches, bananas, cherries, lemon juice, and fruit pectin in a large Dutch oven; stir well. Place over high heat and bring to a boil stirring frequently; quickly stir in sugar.

    Once it comes back to a boil, boil for 1 minute or until mixture reaches 220°F on a candy thermometer, stirring constantly. Remove from heat and skim off surface with a metal spoon.

    Quickly ladle into hot sterilized jars, leaving 1/8-inch head space. Cover at once with the lids and screw on bands tight.

    Process in boiling water bath for 5 minutes.

Made this jam and it did not set. Don't know what could have gone wrong. Can always use it for ice cream topping.

    The amounts in this recipe don't look right to me! The person would rated it, said it wouldn't set. I can't imagine using 12 cups bananas (you would need more than 3 med bananas)plus the recipe calls for using 12 pkgs of pectin. I think there may be a misprint. The recipe just doesn't sound right.
