Roasted Honey Dijon Potatoes

This recipe is only for two servings, you may double if desired, add in some garlic powder or fresh minced garlic if desired

SERVES 2 (change servings and units)

Ingredients

Directions

    Set oven to 375 degrees.
  2. 2
    Mix together mustard, honey, oil and salt and pepper; add to the potatoes and onion slices.
  3. 3
    Pour the sauce over potato/onion then toss well coate.
  4. 4
    Place in a greased baking pan.
  5. 5
    Bake for 35-40 minutes or until potatoes are tender.
  6. 6
    Sprinkle fresh parsley over potatoes.

I made this dish as an alternative to potato kugel - what a nice & refreshing change with the added bonus of being half the work! Thanks - will definitely make this again real soon!!

    I loved the flavor of these. However, my DH said he thought they were just O.K. and would have been better without the onions. I loved them just the way they were. I sliced the onions nice and thin and cooked it for about 40 - 45 minutes or until the onions had started to carmelize a little. That was my favorite part! Thanks Kitten for another great recipe!

    I wish I could give this TEN stars! It was outrageously good. I hope my picture does them justice, because my family went wild over them. We will be making these often since they are so easy and delicious! I added a little sprinkling of Herbs de Provence and it is an understatement that these were TO DIE FOR! Thank you for this recipe.

    I must agree with the others,these were SO yummy... and talk about easy to throw together! I was a little leary about the dijon mustard but it was wonderful! I didn't have any fresh parsley so I used a little dried, other than that followed the recipe exactly. My husband loved them and proclaimed them the best part of the meal! Thanks Kittencal these will be made over and over again!
