Refrigerated Strawberry Cake

I made this cake once for a boy scout auction and it sold for $75.00! I wanted to say..."it's a cake mix!" but of course I didn't. Sometimes cake mixes can make fantastic desserts...this is one of them!

SERVES 12 (change servings and units)

Ingredients

Directions

    Preheat oven to 350 degrees.

    Flour and grease a 13x9 inch pan.
  3. 3
    Prepare cake according to package directions.
  4. 4
    Poke holes at 1" intervals with wooden spoon handle.
  5. 5
    Puree strawberries in blender.
  6. 6
    Evenly spoon strawberries over cake slowly, allowing pureed fruit to soak into holes.

    Prepare pudding using only 1 cup of milk.
  8. 8
    Fold in cool whip.
  9. 9
    Carefully spread over cake after all fruit has soaked in (VERY IMPORTANT).

    Place in refrigerator for at least 4 hours before serving.

    Decorate with fanned berries and mint leaves.

This cake was devoured! So moist from the pureed berries and the frosting was perfect. I served it on the 4th of July and decorated it with the flag made of blueberries and sliced strawberries. Thanks for a fabulous holiday dessert.

    This is an incredible cake! If you have to bring in a cake to work for someone's b irthday - this is the one. It's been requested 4 times by the folks in my department. Word travels fast and others come by to get a taste. Highly recommended.

    I have made this several times (I found the recipe on the cake mix box) lol. There is never any left and if it lasts about 2 days you cant cut it, just dip it with a spoon. Its that moist and yummy. I put my strawberry puree on while the cake is hot then it really soaks into the cake. I ahve even used fresh strawberries because I didn't ahve any frozen. Not as moist that way but stil very good. Just have to put some sugar with the berries to make it syrupy fi yo use the fresh berries

    UPDATE: Made this cake again with the right size of strawberries. Last time i grabbed (2) 16oz. pkg. No wonder i had so much left over, sorry Michelle your recipe is perfect as is. This cake was awesome!! Extremely moist, and full of strawberry flavor. When spreading the strawberries on top of the cake let the fruit soak in on its own. I know it's tempting to get a spoon and try to guide the fruit into the holes, but don't do it you will only end up covering the holes (which is what i did). I used the icing recipe from #75591 What a great icing especially for this cake. Because it was a special occasion I decorated the top of the cake with chocolate covered strawberries, this made such an elegant and professional display. I hope you are as pleased with this cake as me and my hosts were. I took this cake to a friends house for dessert, NONE LEFT and 5 DEMANDS for the recipe. Thank you Michelle =)
