my boyfriend is a huge fan of this dish...i like it too. it's a rather sweet curry. my mom sent me this in an email...she said she made it and thought i might like it it's EXCELLENT when served over rice

SERVES 2 -4 (change servings and units)

    preheat oven to 350.

    heat butter, honey, dijon mustard, and curry together in a pan.

    place chicken in a baking dish and pour sauce over chicken.

    bake for 50-55 mins.

Loved it! I doubled the sauce so there would be plenty to sauce the rice. I think the curry flavor was a little weak, so next time I'll increase it a bit. No other adjustments needed.

    I love it when a simple dish tastes like you slaved in the kitchen all day. This was so easy to prepare, and with simple ingredients I would redily have on hand. My first experience with curry also, and it was very good. I'll make this one again.

    Delicious flavours and super easy to make. The kids loved it too which is always a bonus. Definately cut the honey down it is far too sweet otherwise. I didnt have mustard but used some coconut cream, garam masala spice mix, cumin and coriander for a little extra flavour. Two thumbs up!
